The phrase "with less force" is correct and usable in written English.
You can use it when you want to emphasize that something should be done more gently or cautiously, perhaps to avoid harm or damage. For example: "He released the handle slowly, with less force than before."
The same arguments apply, albeit with less force, to dairy products as well.
