Peterhead, north of Aberdeen, accounts for 30% of Scottish fish landings, and is the biggest whitefish (cod and haddock) port in Europe.
Do not eat refrigerated smoked seafood, such as salmon, trout, whitefish, cod, tuna, and mackerel, which is most often labeled as nova-style, lox, kippered, smoked, or jerky.
This technique works best with salmon, black bass, striped bass, sea bass, arctic char, turbot, whitefish and cod.
Cod and capelin make up about two-thirds of the total catch, and whitefish species such as cod and haddock are exported fresh, frozen, salted, or dried.
Most of the fish likely to have parasites, like cod and whitefish, aren't generally used for sushi.
Bertie Armstrong, chief executive of the Scottish Fishermen's Federation, said: "This deal has now led to the signing of an agreement between the EU and Norway on North Sea quota share arrangements for vitally important whitefish stocks such as cod, haddock, whiting and saithe, with access for Scottish boats into Norwegian waters now coming into operation with immediate effect.
"The value of whitefish landings - led by cod, haddock and monkfish - now accounts for £143m to the industry, this comes despite a decrease in the volume of landings.
Scrod and whitefish are both alternatives to cod.
WHAT WE LIKE -- Cod with mustard sauce, whitefish in wine sauce, grilled vegetables, cold shrimp; suckling pig, pork sausage, prime rib, barbecue ribs, turkey wrapped in bacon; cheese bread, flan.
Farther north, species of most interest are those important to commercial or subsistence fisheries: Arctic cod, ciscoes and other whitefishes, salmon, and trout.
Other offerings were delightful, especially the flaky cod with mustard sauce, the whitefish in wine sauce and the grilled vegetables.
