Quality of care in nursing homes has been traditionally assessed through the Donabedian approach, using the indicators of structure, process and outcome in the majority of studies [ 1, 10].
Even though a propionate/acetate ratio above 1.4 is considered as one of the most appropriate indicators of process imbalance [ 20], for the three overfed reactors it did not exceed 0.17 ± 0.0, what could prevent the right diagnosis of the reactor state if only relying on VFAs measurement.
