"Sunday this week" is a correct and usable phrase in written English
It is used to refer to the upcoming Sunday within the current week. For example: "I have a meeting with my boss on Sunday this week, so I won't be able to go to the party." This sentence means that the meeting with the boss will take place on the upcoming Sunday within the current week, and the speaker will not be able to attend the party because of it.
