Offcuts of meat, chicken livers, beef cheeks, fried fish for breakfast (yes, really) as well as a host of Filipino dishes such as adobo (meat, fish or vegetables cooked in a vinegar, soy sauce and garlic marinade), tinola (chicken and papaya soup) and stuffed trout formed our staple meals, all of which have become favourites with our readers since we started publishing our recipes.

First rate as well was stuffed brook trout, less stuffed (no bread employed) than slathered with fragrant leeks and shiitakes, all under the pleasant sweetness of bourbon-shallot sauce.
On a good night, the stuffed-trout entrée — a silver-skinned, palest-pink filet wrapped upright around a rich mix of bread crumbs and prawns and piled with crunchy slivers of almond — is phenomenal.
Brook trout stuffed with beets and almonds, then brightened with fennel, achieved similar heights.
