The chef, Brian Smit, changes the menu daily and might serve wok-tossed baby calamari with chermoula (a tangy North African marinade) and black mussels in white wine, garlic and turnips.
Served whole, wok fried, boiled and dipped in butter, rolled, made into a taco, and heaped on a salad.
Remove from the wok and serve garnished with a little chopped coriander.

4. Remove shrimp from wok, cool to room temperature and serve to peel and eat.
