A look at some of the CGMP's related to food contact surfaces is helpful to describe the basic operating conditions required to support the use of sanitation controls, and provides the foundation for their use by facilities that must comply with subpart B, while exempt from Subpart C. A full review of all CGMP's is suggested.
Since 1906, meat and poultry processing plants have been required by congressional mandate to establish food safety and sanitation controls in their facilities, controls that are then verified by the Food Safety and Inspection Service FSISS) of the USDA.
