The phrase "quoted text" is correct and usable in written English.
You can use it when you want to refer to text that was quoted from or attributed to another source. For example, "According to Mark Twain, 'Whenever you find yourself on the side of the majority, it is time to pause and reflect,'" is a quoted text.
