The properties of the vacuolar enzyme, acid invertase, showed that this enzyme is able to hydrolyse sucrose and raffinose during the entire recalcitrant period (Fig. 11A) and beyond (Fig. 11B and C), i.e. it preserved its activity due to retention of molecular mass and subunit composition (Fig. 12).
