Starch viscosity characteristics were described using seven parameters of the pasting curve: Pasting temperature (PST), peak viscosity (PKV), hot paste viscosity (HPV), cool paste viscosity (CPV), breakdown viscosity (BDV = PKV − HPV), setback viscosity (SBV = CPV − PKV), and consistency viscosity (CSV = CPV − HPV).
Peak viscosity indicated a high positive correlation with hot paste viscosity (HPV) and cold paste viscosity (CPV) with r>0.700 (P<0.01).
The response functions were extrusion characteristics (torque, specific mechanical energy and residence time), product attributes (water solubility index, water absorption index, and bulk density, peak viscosity, hot paste viscosity and cold paste viscosity).
