"over interesting" is not a correct or grammatically usable phrase in written English.
It is possible that it could be used informally in spoken English, but even then it may not make sense in most contexts. If you are trying to convey that something is more than just interesting, you could use phrases like "extremely interesting" or "fascinating." For example: - The lecture was extremely interesting and kept me engaged the entire time. - I find archaeology to be a fascinating subject. - The movie was so captivating that I couldn't take my eyes off the screen. Using "over interesting" in these sentences would not be appropriate or make sense.
