The phrase "not so healthy" is correct and usable in written English.
It can be used to describe something that is not very healthy or not as healthy as it should be. It is often used to express a subjective opinion about the level of healthiness of something. Example: "I had a salad for lunch, but it was loaded with high-fat dressing so it was not so healthy."
