We assessed the reproducibility of intakes and meal mechanics parameters (cumulative energy intake (CEI), number of bites, bite rate, mean energy content per bite) during a buffet meal designed in a natural setting, and their sensitivity to food deprivation.
The two outcomes of interest were: (1) change in mean energy content (kcal) per purchase before and after regulation, and (2) mean energy content (kcal) purchased among customers who said that they used the calorie information when deciding what to order.
Respondents in the no labelling condition selected meals with the highest mean energy content and those viewing the kilojoule and kilojoule + traffic light information selected meals with a significantly lower mean energy content, that constituted a reduction of around 500 kJ (120 kcal).
One chain, Subway, showed a significant increase in mean energy content per purchase (749 v 882 kcal, P<0.001).
Overall, there was no change in mean energy content of lunchtime purchases from fast food chains after introduction of calorie information for all menu items.
Changes in the mean energy content of purchases from chains with low customer volume in the sample could not be accurately assessed.
