"intermediate occupation" is a correct and usable phrase in written English.
You can use it when referring to an occupation that is between two other occupations, or to a position within an organization that is between two others in terms of responsibility or pay. For example, "He found an intermediate occupation between a retail assistant and a manager that allowed him to gain experience while making a decent salary."
