"heat down" is not a correct or commonly used phrase in written English.
It is possible for someone to say or write it informally, but it would not be considered grammatically correct. A better way to express the idea of lowering the temperature is "turn the heat down" or "decrease the heat." For example, "Can you please turn the heat down? It's getting too hot in here." or "The recipe says to decrease the heat and let the food simmer for 10 minutes."
