Industrial grade sago starch was obtained from Nitsei Sago Industries, Kampung Teh, Mukah, Sarawak.
Carboxymethylcellulose Na-salt (Mw = 700,000 g mol−1, Ds = 0.9, analytical grade), potato starch and NaCl (analytical grade) were purchased from Sigma-Aldrich and were used without purification.
Methanol (HPLC grade), casein, soluble starch, vitamin and mineral mixture, glyceryl trioleate, lecithin, sodium cholate and TES buffer were purchased from Hi-media.

Wheat starch was a general food grade prepared from the market.
