The yeast Saccharomyces cerevisiae is widely used for production of many different commercial compounds such as food, feed, beverages and pharmaceuticals [ 1].
Plant polysaccharide degradation by fungi has been a topic of study for many decades due to its relevance in many industrial applications, such as paper and pulp, food and feed, beverages, textiles and detergents.
Tannase has extensive applications in food, feed, beverage, brewing, pharmaceutical and chemical industries ranging from production of gallic acid, instant tea, coffee flavor refreshing drinks and acorn wine.
Xylanases have widespread potential applications in the textile, feed, beverage, and biofuel industries [ 2, 6- 10]; moreover, they form a major group of industrial enzymes used in the paper and pulp industry.
