We have developed an innovative model to estimate the consumption of vegetable oils and fats by European Union consumers using the European Union consumption databases and elements of probabilistic modelling.
Consumption data of all other fruit and vegetables not included in WHO guidelines, such as potatoes, teas and wine, were excluded from the estimates of fruit and vegetable consumption.
These estimates of fruit and vegetable intakes were, in turn, combined with a large and systematically compiled database of phytonutrient concentration data to develop the estimates of phytonutrient intakes from fruit and vegetable sources for all adults by level of fruit and vegetable consumption.

The verification of model outputs has shown that the model produces estimates of PUFA intake and vegetable oil and fat consumption that are within expected ranges.
