"enjoy of" is not a correct or commonly used phrase in written English
The correct phrase is "enjoying" or "enjoyment of." "Enjoy of" may be acceptable in spoken English in some dialects, but it would still be considered informal. Example: "I am enjoying my vacation in Hawaii." or "I am enjoying the beautiful scenery of the mountains."
