As Mile End in Brooklyn has reinvented the Jewish deli, and Parm in NoLIta reworked the Italian-American sandwich shop, Aamanns took up an institution that had become neglected and synthetic, re-engineered it with traditional methods and good ingredients, then served it up proudly with a side of modern design.
But underneath it all, it's about this: our culture's excruciatingly dangerous claim to have such complete understanding and command over nature that we can radically manipulate and re-engineer it with minimal risk to the natural systems that sustain us.
At the heart of California's vast and complex plumbing system, and the plan to re-engineer it with two tunnels under the Sacramento-San Joaquin River Delta, are two truths.
