In most HAT methods, antioxidants and a probe compete for thermally generated peroxyl radicals and the quantitation is derived from the kinetic curves after monitoring the competitive reaction kinetics. ET methods measure the ability of a potential antioxidant to transfer 1 electron to reduce radicals, metals, or carbonyls, which use the color change of the oxidant as the endpoint indicator.

Official Methods of Analysis, 13th ed. N°46024 and N° 22061. Association of Official Analytical Chemists, Washington. DC).
