The new three-story building, resembling a giant lizard egg of lime-green glass, is a showcase for technology supplied by Better Place, a start-up based in Palo Alto, Calif.
But the blended varieties from both countries (called Acholado) are absolutely perfect for whipping up a Pisco Sour - a simple but effective blend of 2 measures of pisco, ½ an egg white, one measure of lime juice and ½ a measure of sugar syrup, all shaken over ice with the intensity of an earthquake.

But the most appealing nod to the boozy theme may be the margarita meringue pie, a heap of egg-white fluff served with a scoop of lime sorbet and a Martini-glass-shaped cookie with sugar on the rim.
It is served hot topped with a ghee-based gravy, pieces of lime, chopped coriander, sliced boiled egg and fried onions as garnish.
