The sensory properties (sourness, pepper, oily, fatty/creamy and garlic) of nine Ranch salad dressing samples varying in fat and garlic flavor according to a 32 factorial design were evaluated by time-intensity profiling (TIP).
STATIS analysis revealed the existence of a common sensory structure during the early and central portions of the time-intensity evaluations (from 6 to 50 s), i.e., the respective positions of the salad dressing samples changed very little during that time period.
