After dessert (praline "peanut" shells filled with bourbon), Andrés swapped his chef's coat for a T-shirt that read, "MY SLOW IS YOUR FAST".
My opakapaka, a delicate white snapper, was cooked to perfection in its macadamia-nut crust, but what won my chocolate-loving heart was dessert: a dark, crispy chocolate shell shaped like Diamond Head, laid on dry ice so that the crater seemed to be pouring smoke, with two truffles (and chocolate-covered orange segments and strawberries) nestled inside.
WHAT WE LIKED Oysters, mussels, house salad, beet salad, horseradish potato bisque, sweet potato bisque, lobster risotto, cavatappi Bolognese, jerk-marinated pork tenderloin, pepper- and herb-marinated skirt steak, soft shell crabs, all desserts.
So long as I get to have this for dessert – chewy meringues with a crisp shell, softly whipped cream and heavily spiced slices of quince.
Some ideas: Dice the pineapple flesh, tender core and all, mix it with berries or other fruit and pile it back into the shell for a pretty dessert.
Brunch features brown sugar baked ham, lobster benedict and omelets made to order, oysters on the half shell, a farmers market station, dessert station and holiday offerings from the caviar and tartare station served until 3 p.m.
For dessert, there were papaya, flan, or guava shells with cheese.
