"demographic strata" is a correct and usable phrase in written English.
It refers to groups of people sharing the same characteristics (such as age, gender, income level, etc.). You can use it whenever you want to talk about different groups of people defined by their characteristics. For example, "Demographic strata will play an important role in determining the effectiveness of the marketing campaign."
