The phrase "cool eyes" is a valid term in written English, although it is somewhat vague. Depending on the context it can refer to a person's eyes (i.e. "She had cool eyes, the color of the sea at dusk") or to their demeanor (i.e. "He looked at us with cool eyes, unflinching in the face of danger").
