B. officinalis is never found growing under these extreme conditions, and mostly replaces B. crispa at lower altitudes, where it is often growing amongst other vegetation below the canopy of larger trees, or on disturbed ground, but always with a considerable layer of soil available.
In this case, UV-327 and UV-328 were found in considerable amounts in deeper layers of the anaerobic sediment up to 25 years after the industrial releases of the substances ceased.
This environment creates considerable fragmentation, and various layers of complexity.
It is remarkably full-bodied for a village wine, especially one so young, but already one can detect hints of its considerable complexity and the multiple layers of flavor that will deepen and evolve with time.
