'challenging ourselves' is a perfectly correct and usable phrase in written English.
You can use it to refer to any situation in which someone is pushing themselves to their limits or trying something difficult. For example, "We decided to stay up late and finish the project, challenging ourselves to see if we had the perseverance for it."
