This is supported by a higher expression of Collagen X, a gene specifically expressed in growth plate hypertrophic chondrocytes, as in MPS IVA cells (Figure 5D) [34].
However, the observation that oxidative fibers are associated with tender beef has been confirmed in our study by a higher expression of the HADHB known to be mainly expressed in oxidative fibers and also in tender beef in our case.
