Chickpea flour, rice flour, semolina, various beans, lentils and grains, squashes, carrots, thickened condensed milk or yoghurt are normally used as base ingredients; to which cashewnuts, almonds, pistachios, chirongi nuts or raisins are added.
Harira, a mixed bean soup, and a light semolina soup with milk are often served in North Africa.
The slow-roasted halibut was served with a distinctive tarragon-lobster sauce, but the fish was dry, especially compared to its fresh, snappy accompaniments of fava beans, oyster mushrooms, asparagus and blessedly light semolina gnocchi.
