The phrase "average of the former" is correct and usable in written English.
It can be used when referring to the mean value of a previously mentioned set of items or numbers.
Example: "To find the average of the former, we need to add the values together and divide by the number of items."
Alternatives: "mean of the previous" or "average of the prior".
It is likely that the larger average size of the former complexes is because of the presence of the mCherry moiety.
