The phrase "at harvest stage" is correct and usable in written English.
It can be used to describe a specific point in the agricultural process when crops are ready to be collected.
Example: "The farmers are preparing their equipment as the corn is now at harvest stage."
Alternatives: "during harvest time" or "at the time of harvest".
