The phrase "assuming volume" is correct and usable in written English.
It can be used in contexts where you are making a presumption or calculation based on the volume of an object or substance.
Example: "Assuming volume remains constant, we can predict the changes in pressure."
Alternatives: "given the volume" or "considering the volume".

The true stress in the material may be better represented by assuming volume conservation in the material not volume conservation of the specimen.
