The phrase "assayed at the level" is correct and usable in written English.
It can be used in contexts where you are discussing the evaluation or analysis of something at a specific standard or degree.
Example: "The samples were assayed at the level of precision required for the study."
Alternatives: "evaluated at the level" or "tested at the level".
It could also reflect analytical strategy differences, as we assayed at the level of individual CpGs, and evaluated partial correlations, which controlled for effects of other factors, while Ursini et al. did not.
