The phrase "aside from observing" is correct and usable in written English.
It can be used to indicate that there is something additional to the act of observing, often introducing an exception or an alternative perspective.
Example: "Aside from observing the wildlife, we also took notes on the plant species in the area."
Alternatives: "besides observing" or "in addition to observing".
