The phrase "another day of cold" is correct and usable in written English.
It can be used to describe a recurring experience of cold weather, often in a casual or conversational context.
Example: "I woke up this morning to another day of cold, and I just want to stay in bed."
Alternatives: "another chilly day" or "another frigid day".
