The phrase "and the latter sample" is correct and usable in written English.
It is typically used to refer back to the second of two previously mentioned items or examples.
Example: "We analyzed two samples, the former being a control group, and the latter sample showing significant results."
Alternatives: "the second sample" or "the following sample".
