The phrase "and that mind" is correct and usable in written English.
It can be used in contexts where you are referring to a specific mindset or way of thinking that has been previously mentioned.
Example: "In discussions about creativity, we often overlook the importance of emotional intelligence and that mind which fosters innovative ideas."
Alternatives: "and that mentality" or "and that perspective".
