The phrase "an example of evidence" is correct and usable in written English.
It can be used when you want to illustrate or provide a specific instance that supports a claim or argument.
Example: "In the debate about climate change, an example of evidence is the increase in global temperatures over the past century."
Alternatives: "a case of proof" or "a piece of evidence".
"The fat debate [whereby fat used to be the big enemy in food before that was revised] is an example of evidence getting built up to support a theory.
