The phrase "almost consisting of" is not standard in written English and may lead to confusion.
It can be used when describing something that is nearly made up of certain elements, but it is better to use clearer alternatives.
Example: "The dish is almost consisting of various spices, but it lacks the main ingredient."
Alternatives: "nearly made up of" or "almost composed of".
