The phrase "almost bespoke" is correct and usable in written English.
It can be used to describe something that is nearly custom-made or tailored, but not entirely so.
Example: "The furniture in the showroom is almost bespoke, designed to fit a variety of styles while still offering a personal touch."
Alternatives: "nearly custom" or "partially tailored".
