The phrase 'all of my documents' is a correct and usable phrase in written English.
It can be used when referring to a collection of documents that the speaker or writer owns or is responsible for. For example, "I need to make sure all of my documents are in order before I submit my application."
That said, having all of my scanned documents in one place is quite handy.
