The phrase "albeit tender" is correct and usable in written English.
It can be used to introduce a contrasting idea, often to soften a statement or acknowledge a quality while still making a point.
Example: "The steak was overcooked, albeit tender, which made it somewhat enjoyable."
Alternatives: "though soft" or "even if gentle".
