The phrase "adopt the course" is correct and usable in written English.
It can be used when discussing the decision to follow a particular path, strategy, or plan of action.
Example: "After careful consideration, the committee decided to adopt the course that would best benefit the community."
Alternatives: "take the path" or "follow the plan".
