"activity of creating" is a correct and usable phrase in written English.
You can use it to refer to any act of creating, constructing, or producing something. For example, "The artist devoted much of her time to the activity of creating beautiful works of art."
Or, more generically, she wanted to capture the informal activity of creating the piece, and put that into a performance.
