The phrase "accumulation of sleep" is correct and usable in written English.
It can be used when discussing the concept of sleep debt or the total amount of sleep one has obtained over a period of time.
Example: "After several nights of poor rest, I realized that the accumulation of sleep was necessary for my overall health."
Alternatives: "sleep debt" or "total sleep".
