The phrase "abundant categories" is correct and usable in written English.
It can be used to describe a situation where there are many different types or classifications available.
Example: "The library offers abundant categories of books, ranging from fiction to non-fiction and everything in between."
Alternatives: "plentiful categories" or "numerous categories".
