The phrase "a very thin one" is correct and usable in written English.
It can be used to describe an object or concept that has a small thickness or is slender in nature.
Example: "She handed me a very thin one, which was perfect for the delicate task at hand."
Alternatives: "a quite slender one" or "an extremely narrow one".
At the other table, Michael Barel (East) opened a very thin one heart.
Then there's a very thin one of writers who managed to write more than one.
