The phrase "a prior dose" is correct and usable in written English.
It can be used in medical or pharmaceutical contexts to refer to a dose of medication that was administered before the current one.
Example: "Before administering the vaccine, please check if the patient has received a prior dose."
Alternatives: "an earlier dose" or "a previous dose".
