The phrase "a prior assignment" is correct and usable in written English.
It can be used when referring to a task or project that was completed before the current one being discussed.
Example: "Before starting this new project, I need to review a prior assignment to ensure consistency in our approach."
Alternatives: "a previous task" or "an earlier project".
